A healthy twist on the original broccoli salad. Adjust this recipe to make it vegan, vegetarian, dairy free, or whatever your eating style is!
you can use a combination of avocado mayo and silk plain coconut yogurt like I did, its amazing!
Apple cider vinegar
Sesame or Pumpkin seeds
Grapes, strawberries, cranberries or raisins
Shredded cheese of choice
Combine all dressing ingredients and whisk together. Adjust ingredients for taste as you prefer (more vinegar or honey for example)
Cut up broccoli into small florets and put into large bowl
Add in all other ingredients and mix to combine
Drizzle dressing over as much as desired
Top with chicken if you prefer for a full meal!
This is the avocado mayo and yogurt I used. I mixed about 1/2 cup of each for the dressing.
