Chocolate Coconut Muffins

Ok, my son is 2.5. To those who don’t have kids, this means he doesn’t eat vegetables. When I say he doesn’t eat vegetables..I mean I have to puree it and sneak it into everything. I’ve found a couple of amazing recipes that bake with things such as squash, zucchini, carrots, yams, black beans etc etc etc…and the thing is, is that they are actually delicious and you cant even tell its filled with so many nutrients! I have made these as regular muffins, and I have also made them as “cupcakes” and made a coconut icing. So this recipe will showcase both and you can make it with or without the icing! It’s hard to believe this is healthy for you! But it is 🙂

Instructions
  1. Heat oven to 400. Cut yam in half lengthwise and place face up on baking pan. Rub with a bit of coconut oil on top. Bake in the oven until soft, approx. 35-40 mins.
  2. Lower oven temp to 350. Sift coconut flour, cocoa, spices and baking powder.
  3. In separate bowl, add the yams and mash. Add eggs, honey, coconut oil, and vanilla. Whisk together until well blended and no lumps.
  4. Add to dry mixture and fold in coconut flakes or other add ins. Separate into 12 baking cups and bake 18-20 mins
Coconut Icing
  1. Put can in fridge for a couple hours.
  2. Turn can upside down and open with can opener. Drain juice into bowl. you are left with the "coconut butter" that we will be making the icing from. Don't throw away the juice! You can add it to smoothies for later use 🙂
  3. Scrape coconut butter into bowl and add cocoa powder, vanilla and sweetener of choice. Blend until smooth and add to your muffins when they are cold.
  4. These should be stored in the fridge until ready to eat as the coconut icing will get a bit runny if left out too long.
