Whisk the first 5 ingredients in a bowl. Use an ice cube tray or a decorative one that I have (IKEA) to spoon the mixture into each mould 1/3 full. Put in freeze for 5 minutes.
While its freezing, melt the peanut butter with the drops of stevia and 1/2 tbsp coconut oil. Remove trays from the freezer and spoon in the peanut butter mixture another 1/3 full. Put back into the freezer
Remove from freezer and finish the last 1/3 with the remaining chocolate and freeze one more time. I had extra chocolate left over so I added in a few drops of orange extract and put it in the fridge. MMMM
These can be stored in the fridge or the freezer. If left out on the counter they will melt, depending on the temperature of your home so if you are transporting them somewhere be sure to use a cooler!
