I searched high and low to find the perfect lemon protein ball that had super simple ingredients, was healthy, and was really EASY to make! I finally found one ๐Ÿ™‚ I switched out the almonds and used cashews because I thought they would go with this ball better, and they turned out absolutely amazing!

Ingredients
Servings: balls
Instructions
  1. In food processor, process cashews until a powder forms. Add in dates and lemon juice and pulse again until mixed really well. Add protein powder and pulse a few times until combined.
  2. If its too thick to process with the protein powder, remove to a bowl and hand knead it in.
  3. Roll into balls and roll into the shredded coconut. Store in fridge
