Have you guys ever tried coconut flour oatmeal?? I tried it for the first time this morning. For a grain free delicious breakfast, you really should give it a shot! .
It’s made with coconut milk, coconut flour, coconut flakes, collagen powder, and an egg (or mashed banana for an egg free version). It’s naturally sweet and you can add whatever toppings you like! .
I think this is my new favourite dish mmm! .
Ingredients
- 1 Cup coconut milk full fat
- 1/2 Cup water
- 6 Tbsp Coconut flour
- 4 Tbsp coconut flakes finely shredded
- 2 eggs Or substitute 1 mashed banana
- 1 scoop collagen powder

Instructions
- Put all ingredients except egg or banana into saucepan and bring to a boil
- Reduce heat to low and simmer 2-3 minutes
- Remove from heat and whisk in eggs, alternatively add in mashed banana
- Separate into bowls and add whatever toppings you desire! My favourite is fresh fruit, nuts or hemp seeds!
