  1. Heat coconut oil on med heat and add chopped onion. Cook for 1 minute and add lean ground turkey. Cook until brown
  2. Add spices of choice and chopped veggies. In this recipe I added spinach, chopped peppers, broccoli and mushrooms. Simmer until cooked.
  3. Cut peppers in half and seed. Place on baking sheet and fill with stuffing. Top with cheese.
  4. Bake at 350 for 10 minutes. Serve with side salad or brown rice.
