A great way to sneak in veggies for the kids and they taste amazing!
Cook quinoa - Add dry quinoa to 1 cup water in sauce pan. Bring to a boil and reduce to simmer for 15 minutes. Fluff with a fork. You should end up with about 1 1/2 cups of cooked quinoa.
Cook onion and tomato until onion is transparent. Stir in 3/4 c beans, the garlic, seasoning and 1 1/2 cups water. Simmer 10 minutes until most liquid evaporates.
Transfer to food processor and add 3/4 c of the quinoa and process until smooth.
Transfer to bowl and add rest of the beans.
Bake 20 mins, flip and bake additional 10
Extras can be frozen and used later on!
